What Makes Brownies Fudgy?
Fudgy brownies usually have more fat and sugar relative to flour, little or no chemical leavener, and no extra liquid. Melted butter or oil keeps incorporated air low, while a modest flour and egg-white structure lets the center set dense rather than springy. Cakey brownies move the other way: more flour and eggs, often baking powder, and sometimes added water or coffee. Chewy brownies commonly combine high sugar with oil or melted butter and no added liquid.
Those are recipe patterns, not single-ingredient switches. A brownie formula is a system; changing one ingredient without rebalancing the rest can create a fourth, unintended texture.

King Arthur Baking's current brownie-type comparison even includes fudgy formulas with a small amount of baking powder, which is why “fudgy means zero leavener” is a useful tendency but a poor universal law.

Read a Brownie Recipe by Ratio, Not by Ingredient List
Nearly every brownie ingredient list contains some version of fat, sugar, cocoa or chocolate, eggs, and flour. The useful question is how much of each appears relative to the flour.
Baker's percentage treats flour as 100%. Divide each ingredient's weight by the flour weight, then multiply by 100:

Our fudgy brownie recipe uses 60 g flour, 170 g butter, 250 g sugar, and 65 g cocoa in a 20 cm (8-inch) square pan. On a flour basis:
- butter: 170 / 60 x 100 = 283%;
- sugar: 250 / 60 x 100 = 417%;
- cocoa: 65 / 60 x 100 = 108%.
Those percentages are a fingerprint, not universal targets. For contrast, King Arthur's published cakey formula uses 180 g flour, 227 g butter, 447 g sugar, 106 g cocoa, five eggs, 113 g water, and 1 teaspoon baking powder in a 9 x 13-inch pan. Its flour-based butter and sugar percentages are about 126% and 248%. The pan sizes differ, so raw totals would mislead; percentages reveal the balance.
Flour Builds the Brownie's Frame
Flour supplies starch and gluten-forming proteins. In a brownie, more flour relative to fat and sugar generally creates more structure and a drier, more cake-like crumb. Less flour leaves fewer structural solids competing with the fat, sugar, cocoa, and egg, so the center can stay dense.
Two cautions matter:
- Cocoa powder also contributes dry solids and absorbs liquid. Do not treat 30 g less cocoa as equivalent to 30 g less flour.
- A gluten-free flour blend is not automatically a gram-for-gram structural match unless the recipe or product instructions say it is. Check every ingredient label for an allergy requirement; a texture comparison does not establish allergen safety.
Fat Controls Richness, Tenderness, and Air
More fat relative to flour tends to make a brownie richer and more tender. The type and handling of the fat also matter.
Oil is essentially all fat and remains liquid at room temperature, while butter also contains water and milk solids. A formula can use both, as King Arthur's Ultimate Chewy Brownies do with 113 g melted butter and 50 g oil.
Melted butter and creamed butter do not begin with the same air structure. Creaming softened butter with sugar deliberately incorporates air. Melting the butter skips that aeration step, helping a recipe stay dense. That does not mean melted butter alone guarantees fudge; flour, sugar, eggs, liquid, leavener, pan, and bake still get votes.
Sugar Changes More Than Sweetness
Sugar helps a brownie retain moisture and stay soft. A high sugar ratio is also common in chewy formulas. Cutting sugar aggressively can therefore change moisture, texture, spread, and the top crust at the same time.
The shiny, crackly top is related to dissolved sugar reaching the surface and recrystallizing. In King Arthur's documented method, heating butter and sugar to about 110-120°F helps dissolve sugar; semisweet chocolate also promotes the tested formula's crust. Its author labels the chocolate explanation a theory, not a universal mechanism.
Eggs Can Push Structure or Richness
Egg white supplies water and protein. Yolk supplies fat and emulsifiers as well as other components. Together, eggs help bind the batter and set its structure. A higher whole-egg ratio can move a formula toward cakey because additional egg protein supports a firmer network.
Our fudgy recipe uses two whole eggs plus one yolk. That extra yolk adds fat and emulsifying capacity without adding another full egg white. A cakey formula may use more whole eggs and additional liquid. Do not simply remove an egg from a tested recipe: egg size, pan dimensions, flour, and liquid were balanced together.
Leavener and Added Liquid Open the Crumb
Baking powder generates gas that expands the batter. More lift generally means a more open, cake-like crumb; omitting leavener favors density. Added water or coffee hydrates flour and supplies steam, and in the recipe patterns King Arthur analyzed, extra liquid is more common in cakey brownies.
There are exceptions. A small amount of baking powder can give a fudgy brownie a little lift without turning it into chocolate cake. Read the amount in the context of the entire formula.
Cocoa type matters when baking soda is present because natural and Dutch-process cocoa do not have the same acidity. In a recipe with no acid-dependent leavener, the choice may be driven more by flavor and color. Follow the named cocoa in a tested recipe instead of making a casual swap and hoping the chemistry is feeling cooperative.
Cocoa Powder and Melted Chocolate Are Not Direct Swaps
Cocoa powder contributes concentrated cocoa solids with relatively little cocoa butter. Melted chocolate brings cocoa solids, cocoa butter, and usually sugar in proportions that depend on the product. Replacing one with the other changes both the dry and fat balance, and sweetened chocolate also changes sugar.
That is why “cocoa brownies are cakey” and “melted-chocolate brownies are fudgy” both fail as universal rules. King Arthur's current comparison finds cocoa in fudgy, chewy, and cakey formulas. The surrounding ratios decide what the cocoa is doing.
Use chocolate chips or chopped chocolate as mix-ins only when the formula was built for them. A pocket of melted chocolate on the tester can look like raw batter, so check another spot before extending the bake.
Mixing Changes the Air You Start With
A melted-fat brownie can usually be mixed by hand. A creamed-fat method deliberately beats air into softened fat and sugar. Later mixing must follow the recipe: some formulas ask for vigorous egg whisking to build an emulsion and top crust, while others ask only for combined batter after the flour enters.
Use these visual checkpoints:
- Fudgy batter: often thick, glossy, and spreadable rather than pourable.
- Chewy batter: often dense and cohesive, with little visible aeration.
- Cakey batter: may be looser and show more volume from egg, liquid, or leavener.
The Pan Can Change the Result Without Changing the Batter
An 8-inch square pan has 64 square inches of area. A 9-inch square pan has 81 square inches, about 27% more. Spread the same batter across the larger pan and the layer is about 21% thinner because 64 / 81 is about 0.79. A thinner layer reaches its endpoint sooner and gives every portion more proximity to an edge.
Material changes heat transfer too. In King Arthur's side-by-side glass, metal, and stoneware comparison, the glass brownie developed a harder, more cooked outer edge while its center took time to finish.
Use the pan material and inside dimensions named in the recipe. If you must change either, treat the bake as a new test and begin checking by the recipe's visual cues rather than copying the original final minute.
Fudgy Does Not Mean Raw
A fudgy brownie is fully baked but moist and dense. Raw batter is glossy and fluid beneath the crust; a finished fudgy crumb may leave moist crumbs or a small smear on a tester, depending on the formula. The edges should look set, and the center should no longer move like liquid.
There is no universal brownie internal temperature. King Arthur's current small-batch recipe names 205°F for that formula, while its Ultimate Chewy Brownies name 220°F. Those figures are recipe endpoints, not interchangeable brownie law. Use the cues and any temperature supplied by the recipe you are actually baking.
Cool the pan completely before judging texture. Fat firms, dissolved sugar recrystallizes, and the egg-and-flour structure settles as the brownie cools. Cutting early can make a correctly baked center look underdone.
Flour and eggs are raw ingredients. The FDA's current flour guidance says not to eat or taste raw flour, dough, or batter and to clean hands, utensils, bowls, pans, and work surfaces after handling them. Judge the batter by sight, not by tasting it.

Change one variable at a time. If you change flour, pan, oven setting, and bake time together, the next brownie may be better, but it will not teach you why.
Choose the Recipe That Already Wants Your Texture
For dense, moist centers and a crackly top, start with Ambrosia's fudgy brownie recipe instead of remodeling a cakey formula. For another style, choose a tested recipe written for that style and keep its ingredient ratios, pan, and endpoint together.
Read the formula before the oven heats: flour for structure, fat for richness and tenderness, sugar for moisture and crust, eggs for structure and emulsion, leavener and liquid for lift, then pan and bake for the finish.
